Dad found her a recipe on the internet. She looked at it and groaned. Mum\u2019s not good with fiddly things\u2014remember the <a href=\"http:\/\/blog.sibo.co.za\/index.php\/2019\/03\/06\/so-cheesy\/\">cheesecake<\/a> a few weeks ago?<\/p>\n\n\n\n<p>Luckily for Mum,\nDad cracked those nuts because otherwise she would have broken her nails.<\/p>\n\n\n\n<p><em><strong>The ingredients needed for the pastry were the following:<\/strong><\/em><\/p>\n\n\n\n<ul><li>1 cup of cake flour<\/li><li>a pinch of salt<\/li><li>cup of cold butter (cut into small blocks)<\/li><li>half a tablespoon of caster sugar<\/li><li>1 large egg yolk<\/li><li>1 teaspoon of lemon juice<\/li><li>2 teaspoons of iced water<\/li><\/ul>\n\n\n\n<p>You had to sieve\nthe flour and salt first. Then, using your fingertips, rub the cold butter into\nthe flour until it\u2019s all crumbly. Then add the caster sugar to the flour and\nmix in the egg yolk, water and lemon juice. Knead the dough for around ten\nminutes, then wrap it in cling film and let it chill in the fridge for an hour.<\/p>\n\n\n\n<p>After an\nhour, you roll out that dough that\u2019s been chilling in the fridge (literally \u2013\nhahaha) and line a pie tin (or a pie dish). Prick the base of the pasty with a\nfork and blind bake it in the preheated oven for 10 minutes at 180<sup>o<\/sup>C<\/p>\n\n\n\n<p>That\u2019s just\nthe pastry base people.<\/p>\n\n\n\n<p><em><strong>For the filling:<\/strong><\/em><\/p>\n\n\n\n<ul><li>3 large eggs, <\/li><li>1\/4 cup melted butter<\/li><li>1 cup brown sugar<\/li><li>1 teaspoon vanilla essence<\/li><li>80ml golden syrup<\/li><li>3\/4 of a cup of pecan nuts.<\/li><\/ul>\n\n\n\n<p>While the\nbase is cooking, whip up the filling quick. Beat the eggs (you can chuck in the\nleft over egg white from the pastry too), add the melted butter, brown sugar, golden\nsyrup and vanilla essence. When the mixture becomes sort of foamy, it\u2019s ready.<\/p>\n\n\n\n<p>When the base\nis cooked, fill it with the nuts and pour the sweet eggy mixture over the top.\nBake it for about 40 minutes.<\/p>\n\n\n\n<p>Mum made the\npie exactly according to the recipe the first time.
